Sift flour, sugar, baking powder and salt into a large mixing bowl.
Combine beaten eggs, milk, oil and vanilla.
Add to dry ingredients.
Mix only until blended.
Stir in well drained fruit cocktail.
Fry a few teaspoons of batter in hot oil (365Β°) for about 3 minutes.
Before serving, dust with powdered sugar.
Makes 3 to 4 dozen.
