Peanut Butter Chocolate Sandwich Cookies
Peanut Butter Chocolate Sandwich Cookies is an moderately easy dinner. Made with 1 c. peanut butter, 1 c. sugar, 1 egg, beaten, 1/2 tsp. vanilla and 3 oz. unsweetened chocolate, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix peanut butter and 1 cup sugar together.
Add beaten egg and mix well.
Add 1/2 teaspoon vanilla.
Drop by spoonfuls onto ungreased baking sheet.
Press flat with a fork.
Bake at 350Β° for 12 to 15 minutes.
While the cookies are cooling, melt chocolate over low heat.
Melt butter in chocolate.
Remove from heat and add hot water.
Then add confectioners sugar gradually, until icing is thick enough (you may not need to use all the sugar).
Add vanilla. Spread icing on top half of the cookies.
Place plain cookies on top of iced cookies to make sandwiches.
Makes about 1 1/2 dozen.
