Picante Sauce (Salsa)
Picante Sauce (Salsa) is an moderately easy dinner. Made with 25 to 30 medium tomatoes, scalded and peeled, 4 to 5 large onions, chopped, 1 1/2 tbsp. minced garlic, 2 green peppers and 3 jalapeño peppers, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Squeeze juice out of tomatoes.
Save juice.
Grind up everything and put in kettle.
Add the salt, sugar and vinegar. Dilute 1/2 cup cornstarch in tomato juice to make a gravy.
Add when boiling.
Simmer 30 minutes.
Open kettle.
Fill jars and seal.
Makes about 7 to 8 pints.
