Roast Chicken with Vegetables

12-inch Dutch oven.
Pour oil into Dutch oven and heat 5 minutes.
Add garlic, potatoes and carrots.
Sprinkle with salt.
Bake 10 minutes.
Rub chickens inside and out with salt and rosemary. Put 1 bay leaf and lemon in each chicken.
Put vegetables to one side and place chickens in the middle of the oven and bake for 2 1/2 hours.
Cook on medium heat.
