Seafood Gumbo
Seafood Gumbo is an moderately easy dinner. Made with 2 lb. peeled shrimp, 1/2 lb. filet of catfish, 1/2 pt. shelled oysters, 1/2 c. flour and 1 c. celery, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Make roux with flour and oil.
Add onions and chopped celery to roux.
Cook until onions are wilted; add water and garlic. Cook in heavy pot for 1 hour.
Season to taste with salt, black and red peppers.
Add shrimp, parsley and fish.
Cook another 10 minutes.
Add oysters; let come to boil.
Serve in soup plate with cooked rice.
