Shrimp, Peas And Rice Stir-Fry is an moderately easy dinner. Cook black-eyed peas as directed on package.
Heat oil in wok or large skillet until hot.
Stir-fry carrots and onion for 1 minute.
Add mushrooms, garlic, thyme and red pepper; stir-fry vegetables about 2 minutes.
Add shrimp; stir-fry until shrimp are pink about 2 minutes.
Add rice, black-eyed peas and combine with shrimp mixture.
