Sour Cream Enchiladas
Sour Cream Enchiladas is an moderately easy Mexican dinner you can prepare in about 1 hour 4 minutes. Made with grated cheddar cheese, divided, c. chopped onion, dozen corn tortillas, steamed, c. butter and c. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine 2 cups grated cheese and onion and roll inside tortillas.
Place in 9 x 13 pan.
In saucepan, blend butter and flour; add chicken broth and stir until thickened.
Stir in sour cream, green chilies and 1 cup grated cheese.
Pour over enchiladas and sprinkle with remaining cup of cheese.
Bake at 425 degrees for 20 minutes.
