Spaghetti Squash Casserole
Spaghetti Squash Casserole is an moderately easy dinner. Made with 1 large spaghetti squash, 2 small onions, 1 can cream of chicken soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Squash whole in water until fork-tender.
Remove from water and cut lengthwise when cool enough to handle; scoop out seeds and tough center fibers.
Scoop out flesh with a fork or spoon; pull flesh apart.
Drain and cool in colander.
Combine onion, sour cream. Stir in shredded carrot; in drained squash.
Combine stuffing mix with butter or margarine. Spread half of stuffing mix in bottom of 9 x
13-inch baking dish.
Vegetable mixture on top. Cover with other half of stuffing mix.
Bake at 350Β° for 25 to 30 minutes or until heated thoroughly.
