Spanish Tomato Rice
Spanish Tomato Rice is an impressive Spanish dinner you can prepare in about 1 hour 18 minutes. Made with bacon, crumbled, c. finely chopped onion, c. chopped green pepper, (1 lb.) can tomatoes, crushed and c. water, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a 10-inch skillet, cook bacon until crisp; remove.
Pour off half the fat.
In remaining fat, cook onion and green pepper until tender but not brown.
Add tomatoes, water, long grain rice, chili sauce, salt, brown sugar, Worcestershire sauce and pepper. Cover and simmer 35 to 40 minutes.
Crumble bacon on top.
Trim with parsley.
Makes about 5 to 6 servings.
