Stir-Fry Cashew Chicken
Stir-Fry Cashew Chicken is an impressive dinner. Made with 1 lb. chicken breasts, 1 small onion, sliced in rings, 1/2 c. chopped celery, 1/2 c. fresh mushrooms and 1/4 c. chopped green pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut chicken into 1-inch chunks.
Heat oil in large black skillet.
Saute chicken quickly.
Push aside.
Add vegetables and saute quickly.
Combine ginger, sugar, salt, soy sauce, bouillon, cornstarch and water and add to chicken and vegetable mixture. Cook until thickens.
Add cashews.
Serve over boiled rice and add Chinese noodles for topping.
Serves 4 to 6.
