Tortellini Soup
Tortellini Soup is an moderately easy dinner. Made with 2 (14 oz.) cans chicken broth, 1/4 c. parmesan cheese, 6 fresh basil leaves, 1 (14 oz.) can stewed tomatoes and 1 (9 oz.) pkg. cheese tortellini, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Chop basil leaves, stem spinach and mince garlic.
Melt butter in heavy saucepan over medium heat.
Add garlic and saute 2 minutes.
Stir in broth and tortellini and bring to boil.
Reduce heat.
Mix 1/4 cup Parmesan cheese into soup.
Simmer until tortellini are just about tender.
Add tomatoes, spinach and basil.
Simmer 2 more minutes.
Serve, passing additional Parmesan cheese.
Serves 4 to 6.
