Uncle Dave's Noodle Bake
Uncle Dave'S Noodle Bake is an moderately easy dinner. Made with 1/2 lb. egg noodles, cooked, 4 tbsp. butter, 1 small onion, finely chopped, 3 eggs, lightly beaten and 1 1/2 c. sour cream, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a microsafe dish, combine the onion and butter.
Microwave on High power for 2 minutes.
In another bowl, combine the eggs, sour cream and parsley.
Add onion, cheese and ham.
Add salt, pepper and cayenne pepper.
Place the cooked, drained noodles in a lightly greased microsafe dish.
Pour egg and ham mixture over. Microwave on High power for 3 minutes, covered.
Let rest 2 minutes.
Uncover and microwave again at high power for 3 minutes or until just set.
Let rest a few minutes before serving.
