Vanilla Tofu Ice Cream
Vanilla Tofu Ice Cream is an moderately easy dinner. Made with 2 tbsp. kosher gelatin (unflavored), 1/2 c. water (cold), 1 c. cashews (raw), 1 c. boiling water and 10 oz. pkg. tofu, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Soak gelatin in 1/2 cup water in blender for 5 minutes. Whiz briefly.
Cup boiling water and blend to dissolve gelatin. Add cashews and blend smooth.
Add remaining ingredients and blend, gradually adding cubes with water. Blend well. Freeze.
Remove from freezer 30 minutes prior to serving for easier scooping.
