Vegetable Sandwich Filling
Vegetable Sandwich Filling is an moderately easy dinner. Made with 2 cucumbers, seeded and chopped, 1 c. celery, chopped, 1 small onion, chopped, 2 carrots, grated and 1/2 c. green pepper, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Chop vegetables fine and mix well.
Add 1 teaspoon salt. Drain on paper towels placed in colander for 1 hour.
Squeeze out any excess moisture.
Mix 1 envelope of unflavored gelatin with 1/2 cup vegetable juice that has been heated.
Mix whipping cream with mayonnaise.
Add gelatin and lemon juice.
Pour over drained vegetables and mix well.
Chill.
Spread on thin sliced bread. Better if it sets overnight.
