Baked Potato Soup
Baked Potato Soup is an moderately easy soup you can prepare in about 1 hour 40 minutes. Made with large baking potatoes, c margarine, c all-purpose flour, c milk and salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Wash potatoes and bake in conventional oven at 400 for 1 hour or until done.
Cut potatoes in half, length wise and the scope out the pulp.
Melt margarine in a heavy saucepan over low heat.
Add all-purpose flour, stirring until smooth.
Cook 1 minute, stirring constantly until mixture is thick and bubbly.
Add potato pulp, salt, pepper, green onions, 1/2 C bacon, and shredded cheese.
Cook until heated.
Stir in sour cream.
Add extra milk, if necessary for thickness.
Garnish with green onion, bacon and cheese.
