Baked Turkey Stew
Baked Turkey Stew is an impressive dinner. Made with 2 stalks celery, thinly sliced, 1 medium red or green sweet pepper, chopped, 1 medium onion, chopped, 1 clove garlic, minced and 2 tbsp. margarine or butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cook first 4 ingredients in hot margarine or butter until tender.
Stir in next 5 ingredients.
Add undrained tomato and juice cocktail.
Cook and stir until bubbly.
Add turkey. Transfer to 1 1/2-quart casserole.
Cover; bake in 375Β° oven 20 minutes or until heated through.
Season with salt and pepper. Serve over rice.
