Baked Vegetable Omelet
Baked Vegetable Omelet is an impressive breakfast dish you can prepare in about 1 hour 4 minutes. Made with c. shredded pepper jack, monterey jack or cheddar cheese, c. frozen broccoli, thawed, drained and chopped, c. chopped tomatoes, to 1/2 c. diced green and red pepper and c. green onion or regular onion, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Lightly grease a 9 x 13-inch baking dish.
Layer Pepper Jack cheese, vegetables, then Cheddar cheese in dish.
Beat milk, flour, salt, pepper and eggs until smooth; pour over cheese. Bake, uncovered, for 40 to 45 minutes at 350Β° until the egg mixture is set.
Let stand 10 minutes before serving.
