Banana Muffins
Banana Muffins is an moderately easy dinner. Made with 1 c. self-rising flour, 1/2 c. oatmeal, 1 mashed banana, 1/3 c. raisins or chopped pecans and 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 375°.
Combine flour, oatmeal, sugar and baking soda.
Stir in raisins (or nuts) until well coated with dry mixture.
Combine vanilla, oil, egg and milk.
Stir banana and cinnamon into liquid mixture.
Gradually combine the dry mixture with the liquid mixture until moistened.
Grease muffin tin with shortening.
Bake in a 375° oven for 25 minutes.
Makes 6 large or 9 regular muffins.
