Banana Nut Muffins
Banana Nut Muffins is an moderately easy dinner. Made with 1/2 c. butter, softened, 1 c. sugar, 2 eggs, 2 ripe bananas, mashed and 2 c. flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Preheat oven to 400Β°.
Grease 12 muffin pan cups or use paper liners.
Beat together butter and sugar at medium speed until light and fluffy.
Add eggs, 1 at a time, beating well after each addition.
Beat in bananas until smooth.
Mix together flour, salt, soda and baking powder.
Alternately stir flour mixture and buttermilk into egg mixture until dry ingredients are just moistened.
Stir in nuts and vanilla.
Do not overmix batter; it should not be completely smooth.
Spoon batter in muffin cups, filling 2/3 full.
Bake until lightly browned, 15 to 18 minutes. Serve warm.
