Becca's Enchilada Casserole
Becca'S Enchilada Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 (10 1/2 oz.) can cream of chicken soup, 2 (24 oz.) cans enchilada sauce, 2 tbsp. cornstarch and oregano (pinch), salt, pepper and garlic to taste, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Brown ground beef.
Add soup, enchilada sauce and spices and thicken with cornstarch.
Tear tortillas into 1 1/2-inch pieces. Put meat and sauce around the bottom of casserole dish.
Add layer of tortilla pieces.
Sprinkle onion, cheese and olives.
Repeat layers, ending with sauce.
Bake at 350Β° for 40 minutes.
Serves 12.
