Beef Noodle Soup
Beef Noodle Soup is an moderately easy dinner. Made with 1 lb. lean ground beef, 1/2 c. chopped onion, 2 (14 1/2 oz.) cans italian stewed tomatoes, 2 (10 1/2 oz.) cans beef broth and 1 (16 oz.) can mixed vegetables, drained, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a Dutch oven or soup kettle, brown beef and onion; drain. Add tomatoes, broth, vegetables and seasonings.
Bring to a boil; add noodles.
Reduce heat to medium-low; cover and cook for 10 to 15 minutes or until the noodles are done.
Yields 6 to 8 servings. Makes 2 quarts.
