Beef Salad Stir-Fry
Beef Salad Stir-Fry is an moderately easy dinner. Made with 1/3 c. lime juice, 1 tbsp. brown sugar, 1 tbsp. soy sauce, 1 tsp. dried basil and 3/4 tsp. dried mint, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine lime juice, sugar, soy sauce, basil and mint; set aside.
In a medium nonstick skillet, coated with nonstick cooking spray, saute jalapeño, garlic and ginger for 30 seconds.
Add beef slices; stir-fry until desired doneness.
Remove from heat; add red peppers and cucumber and toss gently.
Place greens on serving platter and top with beef mixture.
Add dressing to a pan and bring to a boil, then drizzle over beef.
