Blueberry Muffins
Blueberry Muffins is an moderately easy dinner. Made with 2/3 c. shortening, 1 c. sugar, 3 eggs, 3 c. plain flour and 2 1/2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream the shortening; gradually add sugar, beating until light and fluffy.
Add eggs, one at a time, beating well after each addition.
Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture.
Stir in the blueberries.
Spoon batter into greased muffin tins, filling 2/3 full.
Bake at 375Β° for 20 to 25 minutes. Yields about 2 dozen.
