Bran Flax Muffins
Bran Flax Muffins is an impressive dinner. Made with 1 1/2 c. white flour (unbleached), 3/4 c. flax seed meal, 3/4 c. oat bran, 1 c. brown sugar and 2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix together flour, flax seed meal, oat bran, brown sugar, baking soda, baking powder, salt and cinnamon in a large bowl. Stir in carrots, apples, raisins (if desired) and nuts.
Combine milk, beaten eggs and vanilla.
Pour liquid ingredients into dry ingredients.
Stir until ingredients are moistened.
Do not over mix.
Fill muffin cups 3/4 full.
Bake at 350Β° for 15 to 20 minutes.
Yield: 15 medium muffins.
