Charleston She-Crab Soup
Charleston She-Crab Soup is an moderately easy dinner. Made with 1/4 c. butter, 1 lb. crab meat, 2 c. light cream, 2 c. milk and ground mace, salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Melt butter; add crab meat and saute for 1 to 2 minutes.
Stir in cream, milk and seasoning.
Thicken with cracker crumbs and let stand over lowest possible heat for a few minutes or until heated through thoroughly.
Do not boil.
Add sherry just before serving soup.
