Chicken and Rice Casserole
Chicken And Rice Casserole is an moderately easy dinner. Made with 2 to 3 c. cooked, chopped chicken, 5 c. cooked brown rice, 1 can cream of celery soup, 4 oz. fresh mushrooms, sliced and lightly sauteed and 1 (16 oz.) bag mixed frozen vegetables (broccoli, carrots, water chestnuts and red peppers are good), this recipe delivers authentic, satisfying flavors. Saute mushrooms.
Place frozen vegetables in strainer and thaw with hot water.
Mix rice and soup in large bowl, adding some water to reach desired consistency.
Add chicken and vegetables. Season with salt, fresh ground pepper and thyme to taste.
Bake 20 to 30 minutes in a 350Β° oven.
