Chicken Chimichangas
Chicken Chimichangas is an moderately easy dinner. Made with 6 cooked chicken breast halves, boned, skinned and cubed, 2 c. cheddar cheese, grated, 2 c. monterey jack cheese, grated, 1 c. diced green onion and 1 (4 oz.) can diced green chilies, this recipe delivers authentic, satisfying flavors. Mix chicken, cheeses, onion, chilies and sour cream.
(It's easiest to do this with your hands.)
Put 2/3 cup of the mixture in the center of each tortilla and roll up.
Cook the rolled tortillas, seam side down first, in 1/2 to 1-inch of hot oil until tortillas are well browned on all sides.
Serve hot with salsa, sour cream or guacamole on the side.
