Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 3 chicken breasts, 1 onion, chopped, 1 red or green pepper, chopped, 1 tsp. cilantro and 1 can fat-free refried beans, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cut chicken breasts into bite-size pieces.
Saute in 1 tablespoon oil with onion, pepper and cilantro until tender.
Add beans.
Mix enchilada and tomato sauces in small bowl. Cover bottom of 13 x 9-inch pan with small amount of sauce. Divide chicken mixture into 10 servings.
Place in tortillas and roll.
Place rolls in pan; cover with remaining sauce and cheese. Bake 25 to 30 minutes at 350Β°.
Serve with sour cream.
