Chicken Enchiladas
Chicken Enchiladas is an moderately easy dinner. Made with 2 tbsp. salad oil, 1 medium diced onion, 2 tsp. chili powder, 1 (15 oz.) can tomato sauce and cheddar cheese, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Preheat oven to 350Β°. Saute onion in oil until tender.
Stir in chili powder.
Add tomato sauce, stewed tomatoes and 1/2 teaspoon salt.
Cook over high heat until boiling.
Reduce heat and simmer until sauce thickens slightly.
In large bowl, mix chicken, green chilies, sour cream and salt.
Place 1/2 cup chicken mixture along edge of tortilla and roll.
Pour 1/2 tomato sauce into 9 x 13 dish.
Sprinkle with cheeses.
Place rolled enchilada seam side down.
Pour remaining sauce on top.
Sprinkle with cheese.
Bake until bubbly.
