Chicken Jambalaya

Remove skin from chicken.
Place chicken, water, salt and pepper in Dutch oven.
Heat to boiling, reduce heat, cover and simmer 20 minutes.
Remove chicken from broth.
Skim fat from broth.
Strain broth.
