Chicken-Pineapple Stir-Fry
Chicken-Pineapple Stir-Fry is an moderately easy dinner. Made with 20 oz. can pineapple chunks in syrup, boiling water, 1/2 c. walnuts, 2 tbsp. vegetable oil and 1 chicken breast, cut in strips, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Drain pineapple (reserve syrup); set aside.
Pour water over walnuts; drain.
Heat oil in skillet and stir-fry nuts until brown.
Remove.
Stir-fry chicken, garlic, onion and ginger until chicken turns white.
Remove.
Add broccoli; stir-fry until tender-crisp.
Return nuts and chicken mixture.
Add pineapple. Combine reserved syrup, cornstarch and soy sauce.
Cook until thick and bubbly.
Serve on rice.
