Chinese Fried Rice
Chinese Fried Rice is an moderately easy dinner. Made with 2 tbsp. oil (peanut oil is best), 2 c. onions, coarsely chopped, 2 c. cooked rice (cold), 2 eggs, slightly beaten and 1 tbsp. soy sauce, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Heat pan.
Add oil and fry onions until brown.
Add cold rice and saute.
Add eggs, seasoned with soy sauce and salt.
Saute until done.
For variety, add 2 cups chopped, cooked meat (bacon, ham, shrimp or chicken), chopped pepper or peanuts (shelled and roasted).
Serves 4 to 6.
