Chow Chow Pancakes
Chow Chow Pancakes is an moderately easy dinner. Made with 2 eggs, beaten, 1 c. finely shredded zucchini or crookneck squash, 1/4 c. finely chopped onion, 3 tbsp. flour and 1/2 tsp. poultry seasoning, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a medium mixing bowl, stir together the eggs, potatoes, zucchini, carrots, onion, peppers, flour, poultry seasoning and Worcestershire sauce.
Mix well.
Spoon 1/4 cup of mixture onto a hot, oiled griddle; flatten with a spatula.
Repeat with remaining batter.
(Good for when the zucchini takes over the garden.)
