Claudia's Chicken Enchiladas
Claudia'S Chicken Enchiladas is an moderately easy dinner. Made with 2 c. cooked chicken, 1/2 c. sour cream, 1/2 c. shredded cheese, 1 doz. tortillas and 2 cans chopped tomatoes, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Mix chicken, sour cream and cheese. Fry tortillas until just soft. Spoon chicken mixture on tortilla and roll up.
Place in baking dish. Saute onion, garlic and pepper. Add tomatoes and jalapeño peppers. Pour mixture over enchiladas; add grated cheese on top. Bake in oven until bubbly at 350°. (Use own judgement on peppers as everyone's taste is different.)
