Cucumber Sandwiches
Cucumber Sandwiches is an moderately easy dinner. Made with 1/2 c. nonfat cream cheese, 2 whole scallions, finely minced, 2 tbsp. fresh chopped dill, 1 tbsp. fresh lemon juice and 1/4 garlic clove, finely minced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In small bowl, combine cream cheese, scallions, dill, lemon juice, Worcestershire sauce, garlic and red pepper until well blended.
Cover and refrigerate about 20 minutes.
Spread 1 teaspoon of cream cheese mixture on each slice of bread.
Top each with 2 to 3 cucumber slices and garnish with dill sprigs.
Arrange on platter.
Keep refrigerated up to 8 hours before use.
Serves 10 to 12.
