Diabetic Cheesecake
Diabetic Cheesecake is an moderately easy dinner. Made with 4 eggs, separated, 2 envelopes knox gelatin, 2 tbsp. lemon juice, 2 c. (16 oz.) low-fat (1%) cottage cheese and 1 1/2 c. orange juice, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
In a medium saucepan, beat egg yolks and orange juice together. Sprinkle with gelatin.
Let stand 1 minute.
Cook over medium heat, stirring constantly, until gelatin is dissolved, about 5 minutes.
Remove from heat.
Stir in sweetener, lemon juice and flavoring.
Pour into blender or food processor.
Cover and blend at high speed until smooth, about 30 seconds.
Chill, stirring occasionally, until mixture mounds slightly when dropped from spoon, about 45 minutes.
