Empanadas
Empanadas is an moderately easy dinner. Made with 1 lb. hamburger, 1 c. chopped onion, 1 c. chopped green pepper, 1 can (14 1/2 oz.) tomatoes, undrained and 1 tbsp. chili powder, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cook beef, onion and green pepper about 5 minutes in skillet; drain.
Stir in tomatoes, chili powder, cumin, salt and pepper. Simmer uncovered, stirring occasionally, 15 minutes.
Place 1 unfolded pie crust at one end of cookie sheet, greased.
Place 1/2 of beef mixture on half of pastry round.
Leaving 1-inch border; press edges together to seal and brush pastry with yolk mixture. Repeat with remaining crust at other end of cookie sheet.
Bake preheated at 400Β° for 20 minutes.
Cut in half.
