Enchilada Casserole is an moderately easy dinner. Made with 1 large onion, 1 can tomato paste, 2 cans red chili sauce or enchilada sauce, 12 corn tortillas or corn chips and 1 lb. grated cheese, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Brown onions and meat.
Combine tomato paste, water, and chili sauce; add to meat and bring to boil.
Layer 1/4 of meat in greased casserole.
Cover with 3 tortillas, then cheese and olives; alternate layers.
Add chili and beans before top layer of cheese and olives.
Bake 1 hour at 325Β°.
Freezes well.
