Fiesta Tamale Pie
Fiesta Tamale Pie is an moderately easy dinner. Made with 1 lb. ground beef, 1/4 lb. bulk pork sausage, 1 small onion, 1 clove garlic, minced and 1 (16 oz.) can whole kernel corn, drained, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Heat oven to 350Β°.
In a large skillet, cook and stir ground beef, pork sausage, onion and garlic until meat is brown and onion is tender.
Drain off fat.
Stir in tomatoes, corn, olives and seasonings.
Heat to boiling.
Pour into ungreased dish, 8 x 8 x 2-inch or 11 1/2 x 7 1/2 x 1 1/2-inch or a 2-quart casserole.
Mix cornmeal, milk and eggs.
Pour over meat mixture.
Sprinkle cheese and bake 50 to 60 minutes or until golden brown.
