Grandma Walker's Carrot Pudding
Grandma Walker'S Carrot Pudding is an easy dinner. Made with 2 lb. carrots, peeled and sliced into 1/4-inch discs, 1 lb. yellow cheese (colby, mild cheddar or velveeta), 1/4 lb. crackers, crushed (saltine or wheat thins), 1 small onion, diced and 1 stick butter, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Boil carrots until tender.
Drain.
Mix with butter (mash with electric mixer or use potato masher).
Add diced onion.
Mix. Add 2/3 of the cheese.
Mix. Add 3/4 of the crackers.
Mix. Pour into casserole dish and top with remaining crackers and cheese.
Bake at 350Β° until golden brown and bubbly around edges (about 45 minutes).
