Greek Chicken Salad
Greek Chicken Salad is an moderately easy Greek salad you can prepare in about 1 hour 14 minutes. Made with c. cubed chicken breast, medium size cucumbers, peeled, seeded and chopped, c. crumbled feta cheese, c. sliced, pitted ripe olives and c. chopped parsley, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a large bowl, combine chicken, cucumbers, Feta cheese, olives and parsley; set aside.
In a small bowl, combine mayonnaise, yogurt and oregano.
Add to chicken mixture.
Toss lightly until coated.
Cover and chill.
Serve on Boston lettuce or whole wheat pita.
