Combine first 4 ingredients in a large mixing bowl.
Add corn, onion, egg and 2 tablespoons oil; stir well.
Drop batter by level tablespoonful into deep, hot oil (370Β°).
Cook a few at a time, turning once.
Fry 3 to 5 minutes until hush puppies are golden brown.
Drain well on paper towels.
Yield: about 2 1/2 dozen.
