Jambalaya
Jambalaya is an moderately easy dinner. Made with 1 lb. sausage, 1 medium onion, 1 bell pepper, 1 can diced ro-tel tomatoes, drained and 3 c. juice and water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cut sausage into quarters.
Brown sausage.
Drain grease in skillet with butter.
Brown bell pepper and onion (cut up small). Drain juice from Ro-Tel tomatoes.
Add enough water with juice to make 3 cups.
Add all ingredients.
Bring to a boil.
Add seasoning to taste before boiling, then add rice.
Bring to boil again.
Cover and simmer for 20 minutes.
Remove from heat.
Let sit for 5 minutes.
