Kathy's Cranberry Salsa
Kathy'S Cranberry Salsa is an moderately easy dinner. Made with 2 c. fresh or frozen cranberries, coarsely chopped, 6 tbsp. sugar, 1 tsp. chili powder, 1/4 c. fresh lime juice and 3 medium jalapeño peppers, sliced (do not seed), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In medium saucepan, combine cranberries, sugar, chili powder, lime juice and jalapeños; heat to boiling over medium heat, stirring occasionally.
Simmer, stirring occasionally, for 4 minutes, or until cranberries are tender and mixture thickens. Remove from heat.
Stir in scallions and cilantro.
Let stand at room temperature until mixture has cooled.
