Katie's Jambalaya
Katie'S Jambalaya is an moderately easy dinner. Made with 2 tbsp. butter, 1/2 c. diced onion, 1/4 c. diced green pepper, 1 lb. ground beef and 2 strips bacon, diced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Melt butter in skillet.
Add onions, green pepper, ground beef and bacon.
Cook, stirring often until meat is browned.
Spoon off excess fat.
Drain tomatoes, measuring juice.
Add water to juice to make 1 1/2 cups.
Add the liquid, tomatoes, salt, sugar and thyme to mixture in skillet.
Cover and simmer 5 minutes longer.
