Lemon Icebox Sandwiches
Lemon Icebox Sandwiches is an easy dinner. Made with 1 can evaporated milk (12 oz.), 3/4 c. sugar, 1 tsp. vanilla, 1/2 c. lemon juice or juice of 6 lemons and graham crackers, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Put a mixing bowl and beaters of mixer in freezer.
Put the milk in the refrigerator.
Put a layer of graham crackers in the bottom of a 13 x 9-inch (1/4 sheet) cake pan.
Take the milk out of the refrigerator when chilled.
Put in chilled mixing bowl and beat on medium speed.
As you beat the milk, slowly add in the sugar, lemon and vanilla.
Blend all ingredients well, then pour the mixture over the graham crackers carefully.
Put another layer of graham crackers over the lemon mixture to make a sandwich.
Freeze at least 4 to 6 hours.
Cut in squares and serve.
Serves 6 to 12, depending on the size squares cut.
