Low-Fat Quick Mexican Skillet
Low-Fat Quick Mexican Skillet is an moderately easy dinner. Made with 12 oz. ground turkey, 1 1/2 c. chopped onion, 1 1/2 c. chopped celery, 1 1/2 c. chopped green peppers and 2 tbsp. taco seasoning mix, this recipe delivers authentic, satisfying flavors. Brown vegetables in nonstick Pam sprayed large skillet until onions are tender (approximately 5 minutes).
Add turkey and cook until pink is gone.
Add seasonings.
Mix tomatoes, water and rice.
Cover and cook for 20 to 25 minutes on low simmer.
Stir occasionally until rice is done.
Add cheese and heat until melted.
This makes a big skillet.
