Mary's Roasted Peppers
Mary'S Roasted Peppers is an moderately easy dinner. Made with 6 firm red peppers, 1/4 c. oil, 1/4 c. vinegar, 4 garlic cloves and 1 tbsp. chopped parsley, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Place washed peppers on a baking sheet in oven on the top rung. Broil peppers at 500Β°.
As they char, keep turning until almost completely black.
Remove from oven and let cool.
Remove core and seeds under running water (the outer skin will come off easily). Slice each pepper into 6 pieces.
Add all other ingredients and let marinate at least 2 hours.
