Mexican Chicken Kiev
Mexican Chicken Kiev is an moderately easy Mexican dinner you can prepare in about 1 hour 24 minutes. Put chicken between 2 pieces of wax paper and pound to 1/4-inch thick.
Put 2 tablespoons chiles and 1 strip cheese in center of each chicken piece.
Roll up and tuck ends under. Combine bread crumbs, Parmesan cheese, chili powder, salt, cumin and pepper.
Roll each stuffed chicken piece in shallow bowl containing melted butter.
Roll in crumb mixture.
Place chicken rolls seam side down in baking dish and drizzle with little melted butter.
Cover and chill 4 hours or overnight.
Bake, uncovered in preheated 400Β° oven for 20 to 30 minutes.
