Microwave English Muffin Loaf
Microwave English Muffin Loaf is an moderately easy dinner. Made with 5 c. flour, 1 tbsp. sugar, 2 tsp. salt, 1/4 tsp. baking soda and 2 pkg. rapidrise yeast, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine 4 cups of flour, sugar, salt, soda and yeast.
Heat liquids until very warm (125° to 130°).
Add to dry mixture and beat well.
Stir in rest of flour to make stiff batter.
Spoon into 2 loaf dishes (glass) that have been greased and sprinkled with cornmeal.
Sprinkle tops with cornmeal.
Cover and microwave on Medium power for 1 minute.
Let rest 10 minutes.
Repeat cooking and resting, allowing dough to double in size.
